½ cup butter or coconut oil, softened
½ cup sugar
1 egg or egg substitute
½ tsp baking soda
½ tsp cinnamon
2 cups of Straw Propeller Organic Cinnamon Raisin Swirl Oatmeal
1 cup unbleached flour or gluten-free flour
Preheat oven to 350
Cream the butter or oil and sugar together until fluffy, then beat in the egg. Stir in the baking soda, cinnamon and oatmeal, then stir in the flour.
Place tablespoon-sized balls of dough 1 ½ inches apart on a cookie sheet and bake for 10-12 minutes, watching for golden edges.
